The cuisine of memory is the cuisine that is close to our hearts, the one that we make every day, that we defend in its simplicity and refinement, in its authenticity and in the secrets that the centenarians of the Island have passed down to the younger generation.
Seventeen years ago the Osteria's manifesto was born, a tool that defined, and still defines, the principles and selection criteria of the company: respect and enhancement of regional culinary traditions. Although we are on an island, our cuisine is not only, nor primarily, seafood.
The archaic cuisine is that of shepherds and peasants: meat, flavorful cheeses, varieties of ancient flours and bread of the most disparate forms, desserts based on cheese, almonds and honey, preparations that recall the aromas and scents of the Mediterranean scrub.
